Ingredients
- 1 tablespoon oil
- 1 pound ground chicken (turkey)
- 1 onion, sliced or diced
- 1 green bell pepper, sliced or diced
- 1 red bell pepper, sliced or diced
- 1 yellow bell pepper, sliced or diced
- 3 cloves garlic, chopped
- 2 tablespoons taco seasoning
- 2 1/2 cups chicken broth
- 1 (15 ounce) can diced tomatoes
- 8 ounces pasta
- 1/2 cup sour cream (or heavy cream, or 4 ounces cream cheese) (optional)
- 2 cup cheddar cheese (or monetary jack), shredded
- 1 tablespoon cilantro, chopped
Instructions
- 1Heat the oil in a large pan over medium heat, add the chicken and cook, breaking it apart as it cooks, for 5 minutes.
- 2Add the onion and bell peppers and cook until tender, about 10 minutes.
- 3Add the garlic and taco seasoning and cook until fragrant, about a minute.
- 4Add the broth, tomatoes, and pasta, bring to a boil, reduce the heat and simmer until the pasta is tender, about 8-10 minutes, mixing every few minutes.
- 5Mix in the sour cream and half of the cheese and let it melt into the sauce.
- 6Sprinkle on the remaining cheese and let it melt (cover with a lid for 2-3 minutes or broil).
