Instructions

  1. 1Sauté the onion, garlic, and celery in four tablespoons of olive oil for eight minutes until soft.
  2. 2Add the rosemary, smoked paprika, and chilli flakes; cook the spices for sixty seconds.
  3. 3Add the drained white beans, crushed tomatoes, and vegetable broth.
  4. 4Stir everything together and bring to a gentle simmer; avoid boiling aggressively to maintain the bean texture.
  5. 5Simmer uncovered for twenty minutes until the stew thickens and the beans break down slightly to create a rich consistency.
  6. 6Stir in the fresh spinach until just wilted.
  7. 7Finish with a squeeze of lemon juice and a generous drizzle of olive oil before serving.
